Rogues' Gallery Costumed Halloween Pickup Party

It’s that time of year for an excuse to dress in costume! We’re changing things up a bit and hosting it on a Saturday night (we have another event in the tasting room on Friday). But, put on your costume, come pick up your wine, and hang for a bit before you head to your Halloween party for the night!

The wine selection this quarter is extra special! We have three new bottlings: the 2021 Uncle Charlie’s Mur-low, the 2021 Pax River Red, and a special bottling of our Paxsecco Sparkling Rose. Normally, we carbonate the rose in the tank to make it bubbly. But, we’ve had 12 cases of Méthode Traditionnelle sitting in the cellar for 3 years! It has more body, more bubbles, and a slightly yeasty, brioche taste! Want to know more about the method, see description below.

Méthode Traditionnelle

The labor-intensive process whereby wine undergoes a secondary fermentation inside the bottle, creating bubbles. The process begins with the addition of a liqueur de tirage (a wine solution of sugar and yeast) to a bottle of still base wine, triggering a secondary fermentation inside the bottle which produces both carbon dioxide and spent yeast cells, or lees, which are collected in the neck of the bottle during the riddling process. The lees are then disgorged from the bottle, and replaced with a solution of wine and sugar, giving the sparkling wine its sweetness. All Champagne and most high-quality sparkling wine is made by this process. Also known as méthode Champenoise, méthode classique and metodo classico.
